In a pleasant, colonial-style shopping plaza on the road to Coronado, this Panamanian restaurant belongs to Fernando Paredes, who was the executive chef at the nearby golf resort for years before starting his own place. He changes his menu daily, but it always offers a good mix of meat and seafood dishes with predominantly Panamanian preparation with international inspiration. There is invariably corvina (sea bass), langostinos (prawns), and other seafood served with sauces that range from mushroom to mango. He also serves (rather expensive) grilled USDA-certified beef. The building is right out of the 19th century, with terra-cotta floors, ocher walls, and ceiling fans hung from the high wooden beams beneath the barrel-tile roof.
